Calabacita (Mexican Squash)

Calabacitas (which translates to “little squash” in English) is a Mexican dish made from sauteed zucchini or squash, corn, sausage and peppers.
Ingredients
1 Pound Ground Italian Sausage
3-4 small Calabacita
1 medium size Onion (diced)
2 cloves Garlic (diced)
1 ½ cups Kernels of Corn
4-8 Roasted Green Chili’s (cleaned and peeled)
¾ cups Shredded Cheese
Salt to taste
Warm Tortillas
Instructions
Cook ground Italian sausage. Drain and set aside.
In a skillet sauté calabacita, onion, and garlic.
When calavacita and onions are tender, turn heat to low. Add corn, chili’s and sausage.
Continue to simmer to allow blending of flavors and salt to taste.
Serve in warm tortillas with shredded cheese.
Different chili varieties can be used to adjust the heat.
