JoAnn's Zucchini Bread


2 large eggs

2 cups sugar

1 tsp cinnamon

1 tsp baking powder

1 tsp vanilla

3 cups flour

3 cups grated zucchinni

1 cup vegetable oil

1 cup chopped walnuts

1 cup coconut

1/2 cup heath toffee bits


Beat eggs until light and frothy; add sugar, oil and vanilla, mix until thick.

Sift dry ingredients and add to wet ingredients. Then add zucchini, walnuts, coconut and toffee bits. Bake in two greased loaf pans for one hour at

325 degrees. Freezes great and makes perfect Christmas gifts.
